How your outdoor kitchen is built

From the layout to the first meal, these are the stages of a new summer kitchen.

  1. Stage 1

    Design & permit

    Kitchen layout on the plan with the pool and the doors, appliances chosen, permit and HOA approval.

  2. Stage 2

    Utility rough-in

    Gas, water, drain and electrical lines are run under the deck or patio and inspected.

  3. Stage 3

    Footing & base

    A footing or a sound slab carries the kitchen, and the masonry base is built with openings for each appliance.

  4. Stage 4

    Counters & finish

    The base gets its stone, tile or stucco finish, and the counters are set.

  5. Stage 5

    Appliances & hookups

    Grill, sink, refrigerator and lighting are installed and connected.

  6. Stage 6

    Inspection & walkthrough

    Final inspections, then we show you the gas shutoff, the controls and how to care for the counters.

Outdoor kitchens in Tampa Bay & Florida’s West Coast

A summer kitchen keeps the cooking outside, next to the pool and the people, instead of back and forth through the house. On Florida’s West Coast it gets used most of the year. Zeta Construction designs outdoor kitchens as part of the backyard, with the pool, the deck and the cover over them.

The best place for a kitchen is close to the door to the house, out of the main path to the pool, with the grill set so smoke drifts away from the seating. When we build your custom pool, we draw the kitchen on the same plan. The gas, water and electrical lines run under the pool deck before it is finished, and the screen enclosure or the lanai roof is sized to fit it. One team builds all of it, on one schedule.

Utilities, permits and the weather

An outdoor kitchen with gas, electrical or plumbing needs a permit and inspections, and so does a roof over it. Licensed trades run the gas line, the GFCI-protected circuits and the sink drain, and the work is inspected before the counters close it in. The base is built in masonry, and the counters, doors and appliances are chosen for sun, rain and humidity. Under a roof, we follow the grill maker’s clearances and add a vent hood where it is needed.

Adding a kitchen to the patio you have

You do not need a new pool to add a summer kitchen. We check the slab or the pavers, the route for the gas, water and power lines, and the space under the roof or the enclosure, then design a kitchen that fits. Do I need a permit for an outdoor kitchen?

When it includes gas, electrical or plumbing connections, yes, and a roof over it needs one too. A grill on a counter with no utilities may not. In a community with an HOA, approval is usually needed as well. We prepare the permit and schedule the inspections with the rest of the project.

Natural gas or propane?

If the house has natural gas, a line can run from the meter to the kitchen and you never refill a tank. Without it, propane comes from a tank piped to the kitchen or a cylinder stored in the cabinet. Grills are made for one fuel, and some can be converted with the manufacturer's kit.

What counters hold up outside in Florida?

Granite and other natural stone, porcelain slabs and concrete are common outdoor choices because they handle sun and humidity. Many quartz products are made for indoor use and can fade or discolor in direct sun, so check the manufacturer's rating before choosing one.

Can you add an outdoor kitchen to my existing patio or lanai?

Often, yes. We check whether the slab or pavers can carry the kitchen, how the gas, water and power lines will reach it, and the clearances under the roof. Sometimes a small section of the patio is opened to run the lines, then closed and finished to match.

Can the kitchen go under the lanai roof or inside the screen enclosure?

Yes, with planning. Under a roof, the grill needs the clearances its manufacturer requires, and a vent hood is often the right call. Inside an enclosure, the grill is kept away from the screen and the frame. When we build the enclosure too, we size it with the kitchen in mind.
